Can't say for sure in elden ring, but in dark souls, the caestus had a fairly fast parry speed, so most people would parry too early. A light shield is good for learning the general timing of a parry, caestus requires you to wait until basically the last moment. That said, take this with a grain of salt as I never run parry builds.
