You wouldn't blast a squirrel with an elephant rifle and expect a good pelt, so don't shoot a bear with a few smaller bullets and expect a perfect pelt either. For big game like bears you need a larger bullet from a stronger rifle, or use a bow with improved arrows.
Stats are basically the same, one is higher for health, one for stamina so take your pick. The beaver one has pretty good stats when it comes to the horses cores. They have between 12-18% instead of the crafted ones 20 -26%. With the crafted ones you have to exit the stable and enter the menu as ladythorborg mentioned to see the stats. Crafted saddles do not have stirrup options on the other hand.
Shit bears just spawning all over. Anyway, have sold both to the trapper but neither seem to unlock the Bear Dakota saddle, which requires 1 perfect bear pelt. I have seen one video where someone as found a “Bear” in the Dakota River, however the compendium only lists 2 bears.
